Langostino
Prawn salad, wakame and rice noodles

Ingredients
NUCHAR prawns | 150 g. |

Wakame seaweed dressed | 50 g. |
Dutch cucumber | 1 ud. |
Rice noodles | 100 g. |
Shallot | 1 ud. |
Sesame seeds | 1 cucharada sopera. |
Sauce
Dashi in granules | 0,5 g. |
---|---|
Rice vinegar | 125 ml. |
Sesame Oil 1 tablespoon. | 1 cucharada sopera. |
Soy sauce 2 tablespoons. | 2 cucharadas soperas. |
Grated ginger a pinch. | Una pizca. |
Sugar | 1 cucharadita. |
Mirin (optional) | 60 ml. |

Peel and cut the cucumbers in half and
lengthwise. remove the seeds with a teaspoon and cut the sliced cucumber thinly. Put the slices to “cure” with salt in a drainer for 10 minutes. Rinse, drain and cool. -
Cut the shallot into very fine julienne strips, put it in water for 20 minutes, drain and chill.
For the Sauce:
Mix all the ingredients in a bowl. Reserve. Dissolve well the dashi granules in a tablespoon of hot water and add to the sauce. Cool. -
Cook the noodles for 2 minutes in boiling water, remove and cool in cold water. Mix the noodles, prawns, cucumber, wakame, shallot with the dressing.
Dish finishes
Plate the ingredients separately. Add the sesame.
Tricks
You can add other ingredients like edamame and avocado for a more complete dish.
